Ester De Martino is PhD student in Food Science at Universiy of Naples “Federico II”. She started her PhD career after got the graduation in Sciences and Technology of Animal Productions. She attended last three editions of Workshop on the Developments in the Italian PhD research on Food Science, Technology and Biotechnology and last Sistal congress in Bari (It). She works on agri-food waste and during World Summit in Food Science she will cover enzymatic biotechnologies to disassemble by-products and the techniques she applied to evaluate the enzymatic action
