Jessica Itzel Rosas Rivas

Jessica Rosas is a Biotechnology PhD student at Universidad AutónomaMetropolitana, where she also earned her bachelor’s degree in food engineering and her master's degree in Biotechnology. Her master's research focused on a comparative study of bioplastic production between submerged and solid-state fermentation. Since 2022, she has been teaching various courses, including Bioremediation, Agri-Food Biotechnology, and Phytopathology, at Universidad Anáhuac. Currently, her PhD research investigates the effects of high exogenous protein content on the structuring, texture, and in vitro digestibility of starch in breads.
